Baked Egg Squares with Jalapenos recipe
I love recipes with few ingredients, and this Mexican egg casserole fits the bill with only four ingredients – eggs, shredded cheddar cheese, diced, canned jalapenos and diced onions. If you’re like me, you probably already have 3 of the 4 in your pantry already, and the canned jalapenos are an easy pantry item to add to your grocery list.
My friend Gabe shared this Cheesy Jalapeno Egg Squares recipe with me. It’s a standard dish on her family’s holiday table. Cut these jalapeno baked eggs into squares, and you have the perfect appetizer. Or, this would be divine served for breakfast or brunch.
I made these for my BFF and her husband for a quick, impromptu Friday night, and let’s just say that the three of us took out the entire pan. They are that good!
It’s a simple recipe. You truly mix together all four ingredients, pour into a baking dish and bake. Serve baked egg squares with jalapenos hot or at room temperature.
Low Carb Recipe
You might also call these keto egg cups since all four ingredients qualify as low carb. I love great keto breakfast recipes. Eggs, cheese, jalapenos and onions (in moderation) are all low carb ingredients. Low Carb Egg Cups for the win if you are starting off the year on a low carb or keto diet. If you are worried about the onions in your low-carb diet, use scallions instead as they have a lower sugar content.

How to Make Mexican Cheese Squares
Step by Step Instructions
- Preheat oven to 350 degrees F. Spray an 8 x 8 inch baking dish with nonstick cooking spray.
- In a large bowl, beat eggs. Then add shredded cheese, diced onions and jalapenos and mix.
- Pour into prepared baking dish.
- Bake for 30 minutes or until set and lightly golden around the edges.
Storage Instructions
Let leftovers cool. Transfer to an airtight container, and store in the refrigerator for 3 to 5 days.

- I used canned jalapenos. Drain off the excess liquid and dice into the desired size. A 7 ounce can equals to approximately 1/4 cup. Like it hot? Add more. Prefer less heat, use less jalapenos.
- For the cheese, use cheddar cheese that is either pre-shredded or you can shred it yourself. These cheesy jalapeno bites would be delicious with other types of cheese like Monterrey or Colby Jack.

Recipe Variations

- Fresh herbs would be a tasty addition.
