Make a filling and fresh low-carb lunch. This keto avocado egg salad recipe is bursting with flavor, you’ll want to make it every day.
There are a few salad recipes that I love to make over and over again, and this is one of them. I’m thrilled to share this with you, I bet you’ll love it as much as I do.
Low-Carb Egg Salad
This is the perfect lunch or side-dish. It’s filling enough to be your entire lunch, with just a few raw veggies on the side. You can also serve it at parties or as a side dish at cookouts.
I love bringing my own low-carb side-dishes to BBQs and cookouts. I can’t always trust that there will be keto choices available, but if I bring my own, I know there will be things I can eat.
My Favorite Egg Salad Recipe
I love that this recipe uses simple ingredients I already have in my refrigerator. In fact, after you make it one time, you’ll be able to make it easier next time. It’s an easy recipe to memorize.
How To Store Keto Egg Salad
This is the perfect recipe for make-ahead lunches and meal prep. Make this lunch at the start of the week and store it in the refrigerator so you can use it for the rest of the week.
Store it in an airtight container. It will last about a week before the texture changes.
The avocado will last this long because of the lime juice. That’s my favorite kitchen hack. If you want to prevent chopped avocado from turning brown, add lemon or lime juice to it.

Ingredients
All of these fresh ingredients combine to make an unmistakable and irresistible low-carb lunch. Here is what I used, along with any substitutions you can make.
Avocado – Make sure it is ripe, pitted, and diced.
Eggs – Hard-boil them ahead of time. This will make the salad prep go faster.
Mayonnaise – Any kind of mayo will work. Primal Kitchen makes an avocado oil mayo that will taste perfect. Just make sure and use one without any added sugar.
Lime Juice – You can also substitute with lemon juice. Fresh squeezed will have more flavor but the bottled kind works just as well.
Minced Chives – If you don’t have chives, you can use some minced green onions instead
Lettuce – Use large-leafed lettuce that can hold the egg salad. I prefer butter lettuce, I’ve seen other people use iceberg lettuce.
Optional Low-Carb Toppings for Egg Salad
